 Brownie Recipe Step By Step – These homemade fudgy brownies have it all. They are moist, brown, slightly chewy and have a perfect crispy top. Read on to discover the secret to the best brownies! No mixer required!

I’ve been perfecting this homemade brownie recipe for years…I tweak it every time I make it and this last batch was so good I had to update the recipe. The good news is that they are much easier and I have found a foolproof way to get a crispy crust every time.

There are about a billion brownie recipes. The reason is that even though technically there isn’t much you can do to make a brownie, just changing one of the ingredients can change the taste and texture of the brownie.

One Bowl Fudgy Brownies

Butter and Oil – Hot butter and a little oil will not only rehydrate the cocoa powder, but also keep the brownies from drying out.

Chocolate – I like dark chocolate in my brownies, but you can use semi-sweet or milk chocolate. Dark chocolate has less sugar, milk chocolate has more sugar. You may want to adjust the amount of sugar in the recipe depending on the chocolate you are using.

White Sugar and Brown Sugar – Sugar adds moisture and sweetness to your brownies. I like to use a little brown sugar which adds a nice flavor and a little chew to my brownies.

Eggs – Eggs add moisture and structure to brownies. The more you beat the eggs, the more air will get into your brownies. I beat the eggs and sugar until smooth and combined, then added the butter/hot chocolate.

Easy Chocolate Brownies

Cocoa Powder – I prefer to use Dutch cocoa powder, which gives the brownies a really nice and sweet flavor, but you can use any cocoa powder you like, such as Hershey’s. Since there is no baking powder or baking soda in this recipe, it doesn’t matter what kind of cocoa powder you use.

Flour – This recipe uses all-purpose flour, but you can also use cake flour for a softer brownie. The trick is to fold the flowers slowly so that the brownies are not hard and dry.

Mix-ins – You can add all kinds of additional ingredients to your brownies to make them your own. Candy pecans, chocolate chips, caramel, cream cheese or candy. The list goes on. The best thing about making brownies is making them the way you want them!

The easiest way to make fudgy brownies is to not overbake the brownies. Brownies will firm up as they cool, most people over bake and end up with dry brownies.

Incredible 3 Ingredient Nutella Brownies

Brownies should be baked until the center is set (not jiggly), but still soft. In a 10″x13″ pan, exactly 19 minutes, but the type of pan you use and your oven may give you different results.

Step 2 – Make sure the eggs are not too cold. I put mine in a bowl of hot water to heat for 5 minutes. Cold eggs will cool the butter quickly and the sugar will not dissolve.

Step 3 – Melt the butter, oil and chocolate in a saucepan over medium heat. Stir occasionally until the chocolate melts.

Step 4 – Beat the eggs, white sugar, brown sugar, salt and vanilla together in a stand mixer or by hand until blended and glossy. About four minutes on medium high.

Step 5 – Add the butter/hot chocolate mixture to the egg mixture and stir until there are no lumps of sugar between your fingers. If the mixture is too cold, you can return the bowl to the pot of simmering water and stir for another minute or until you can no longer feel the sugar.

Pro-Tip: Stirring the butter/hot chocolate mixture into the egg mixture until the sugar granules dissolve is the secret to that shiny, flaky crust on mixed brownies.

Step 6 – Slowly fold in the flour mixture and add the chocolate chips (or chopped nuts or m&ms if you want). Or leave it blank!

Step 7 – Line a 10″x13″ baking pan with parchment paper. I cut and folded the edges of the parchment so that the sides lay flat. The parchment paper makes it easy to remove the brownies later.

Step 8 – Bake the brownies at 350ºF for 18-20 minutes or until set. Don’t overcook when you take it out of the oven because it will continue to bake in the pan.

Step 9 – Let your brownies cool until the pan is almost warm before removing the brownies. Cut with a ceramic or plastic knife to reduce sticking.

You can use any pan you want to make brownies in, but remember that different pans bake in different ways, so be sure to adjust.

Light colored metal pan – This is the type of pan I use. They are light and distribute heat evenly.

Dark colored metal pans – Dark metal pans get very hot and will burn the brownies faster. Do not place the pan too close to the bottom of the oven and check beforehand (10 minutes before) to avoid accidental burns.

Glass and Ceramic Pans – Brownies baked in glass or ceramic pans take longer to bake in the oven.

I over-baked my brownies every time, which is probably part of the reason they were dry. I figured the right way to check if the brownies are done is to put a toothpick in the middle and when the toothpick comes out clean, they are done. INCORRECT!

I know that homemade brownies continue to cook right after they come out of the oven. So if you wait until the toothpaste comes out clean, it’s too late.

Easy One Pot Fudge Brownies

You want to remove the brownies from the oven when the toothpicks are still very moist with crumbs attached, but not liquid.

I always line the pan with parchment paper instead of using baking spray or cake goop because it’s easier to remove from the pan when it cools.

The last batch of brownies I made had a topping like this. Very dry and not very good.

I did a lot of testing and discovered the secret to getting a shiny brownie crust.
